Ingredients:
Sponge Cake – 1
Whipped Cream – 200 ml
Mangoes – 2 ripe
A few Cherries
Fruit Juice – 1 cup
Cherry – 1 tbsp
Mixed Fruit Jam about 20 oval Meringues
Method:
Place the sponge cake on a round plate. Cut into half. Spread a layer of jam. Put the top half over the cake. Peel and Slice mango. Spread a layer of cream on the sponge cake and over this, place the mango slices. Stick the meringues round the edge with a little cream. Finish off by decorating with the remaining whipped cream and cherries. Serve cream separately also.
