3 Teacups cream (top of the milk stored in the freezer compartment till you have the requisite quantity) ; 4 teacups sugar ; 1 large coconut, grated and ground to a paste ; 1 tsp, vanilla essence.
Put cream, sugar and coconut paste into a pan and stir well, over moderate heat till the mixture turns light brown and leaves the sides of the pan. Add vanilla and stir. Turn out on to a greased thali and flatten. when cool, cut into diamonds.
