SPINACH AND EGG BAKE – Viji’s Food Recipes


Eggs – 8 Poached

Grated Cheese – 6 tbsp

Paprika Sauce – to taste

Butter – 4 tbsp

Flour – 4 tbsp

Rich Milk – 1 1/4 cup

Cream – 1/2 cup

Salt and Pepper to Taste.

For Spinach:

Spinach – 1/2 kg

Onion – 1/4 Chopped

A pinch of grated Nutmeg

Salt and Pepper to Taste

Sugar – 1 tsp

Oil – 1 tbsp


Melt butter, add flour and stir. Simmer, Stirring often, till mixture froths.Gradually add milk, stirring to a smooth paste (use a wire whisk). Simmer till it thickens. Add cream, cook on low heat till it is of coating consistency. Season with salt and pepper.

Separately wash and cook spinach, covered. Puree or mash. To Cooked spinach add salt, sugar and nutmeg. Meanwhile saute onion in oil, drain and add to spinach along with one – third cup sauce.

Grease a baking dish. Spread spinach uniformly. Arrange poached eggs on it. Pour remaining sauce over the eggs. Sprinkle grated cheese and paprika. Brown under the grill or bake till light brown. Serve hot.
