Cream of Leek Soup

Ingredients:   (for 4)

Leeks  –  455 gm

White stock – 750 ml

Milk – 300 ml

Butter –  30 gm

Refined flour – 30 gm

Pepper – to taste

Salt – to taste

Method:

Wash and trim the leeks.

Cook leeks in stock till tender.

Press through a sieve to form a puree and return to fire.

Thicken with the butter and flour, well creamed together.

Season to taste.

Add hot milk. Bring to boil and remove from fire.
