1 – Recipes Pizza Crust ( See Pizza Napoli) , ready to roll out
Spicy Salsa – 3/4 cup
1 – small red onion, thinly sliced
Monterey jack cheese , thinly sliced – 10 ounces
Pimiento, cut into thin strips – 1
Ripe avocado, peeled and diced – 1 small
Chopped cilantro (coriander leaves), optional – 2 tbsp
Step 1: Preheat the oven to 375′ F. On a lightly floured surface, roll out the dough into a circle 1/8 inch thick and 12 inches in diameter.
Press into a lightly oiled, 12-inch, round pizza pan.
Spread the sauce overs the dough and lay the onion slices on top.
Arrange the cheese and pimiento strips on top of the onion.
Bake, uncovered, on the lower rack of the oven until the bottom crust is crisp – about 40 minutes.
At this point the pizza can be cooled to room temperature and stored. Refrigerate in the pan, tightly covered, for up to 24 hours.
Step 2 : Arrange the avocado on top of the pizza and sprinkle with the cilantro.
Cut into wedges and accompany with a salad of romaine, endive, orange slices, and walnuts topped with a vinaigrette dressing.
Serves 4 as a main course, 8 as an appetizer.
Serving Later: Preheat the oven to 400′ F. Heat the pizza, uncovered, until warmed through – about 10 minutes. Proceed in step 2.
