Sauce Hachée


Ingredients:

Fish Veloute – 1 litre

Shallots (chopped)  –  30 gm

Onions (chopped)  –  60 gm

Capers (chopped)  – 30 gm

Anchovies (chopped)  – 60 gm

Vinegar  – 75 ml

Parsley (chopped)  – 1 tsp

Duxelle  – 60 gm

Method:

Heat a pan. Add chopped onions and shallots.

Cover, to allow them to sweat.

Add the vinegar and reduce until almost dry.

Add veloute and other ingredients.

Bring to a boil. Skim.

Correct seasoning and consistency.
