Play Summer Cool

Basic Ice cream
Milk – 1/2 litre
Eggs – 2
Sugar – to taste
Gelatine – 1 tsp
Water – 2 tbsp
Vanilla essence as desired
Boil the milk.
Beat the egg and stir the boiling milk into the eggs making sure the egg does not curdle.
Add sugar and cook over gentle heat till the custard thickness enough to coat the back of the spoon.
Dissolve the gelatine in hot water till clear.
Whisk into the custard. Add flavouring and colour and set aside to cool.
When cold, put into refrigerator trays and freeze till firm around the edges.
Turn into a chilled bowl and whip quickly and thoroughly.
Return to the trays and freeze till hard.
Coffee Ice cream
Omit the vanilla in the above recipe and add 1 tsp of instant coffee powder when making the custard.
Chocolate Ice cream
Add i tbsp of cocoa with the custard powder, omitting the vanilla essence.
Banana Ice cream
Mash 4 ripe bananas and mix with 4 tsp lemon juice. Add this to the basic mixture when partially frozen. Omit the vanilla essence.
Mango Ice cream
Substitute mango essence for the vanilla essence or alternatively add a cupful of mango pulp to the partially frozen mixture.
