Spongy Orange Delight


Ingredients:

Self-raising flour – 100 gm

Butter or Margarine – 50 gm

Caster sugar – 100 gm

Eggs – 2  (separated)

Juice of a small orange – 1

Milk  – 1/3 litre

A little icing sugar for dredging.

Method:

Cream fat and sugar together till light and fluffy.

Add egg yolk to the creamed mixture, and beat really well with a wooden spoon.

Stir sifted flour with rind and juice of the orange.

Gradually add milk to the mixture, stirring well. (Don’t worry if the mixture looks curdled; during cooking it will make its own sauce).

Fold stiffly whisked egg whites into the mixture lightly, using a metal spoon.

Put the mixture into a well-greased oven proof dish and stand the dish in a larger pan of cold water.

Cook in a moderate oven (350’F) for about 40 to 50 minutes till well risen, golden brown, and cooked through.

Sprinkle with a little of the sifted icing sugar, and serve hot, with cream (optional).
