Egg Vindaloo


Ingredients:

Hard Boiled Eggs  – 7

Onions – 2

Cloves garlic  – 4

Ginger  – 1.27 cm  (1/2″)

Red Kashmiri chillies  – 4

Cumin seeds  – 1 tsp

Cinnamon stick  –  1.27 cm (1/2″)

Vinegar  – 4 to 5 tbsp

Jaggery  – 1 tbsp

Salt –     1   to   1   1/2 tsps

Garam Masala   –  1/2  tsp

Ghee or oil  –  3    to  4 tbsp

Water   – 1/2   to   3/4   cup


Method:

Grind red chillies, garlic, ginger, cumin seeds and cinnamon with sprinkling of vinegar.

Slice onions finely.

Crush jaggery and mix in the vinegar.

Shell eggs. Heat ghee.

Fry eggs till golden and take out.

Cut in halves crosswise.

In the same ghee fry onions till golden.

Add ground paste, cook for a further five minutes with a sprinkling of water.

Add vinegar-jaggery solution, garam masala and water.

Simmer for a minute, lower the eggs gently into the gravy.

simmer further till well blended and creamy.

Goes well with boiled rice or bread.
