Fruit and Rice Stuffing



Ingredients:

1/4 cup   (1/2 stick)   unsalted butter or margarine

1 Large yellow onion, finely chopped

1  Large stalk celery, finely chopped

2 cups white rice

3 cups Chicken stock or canned chicken broth , turkey broth

Water  – 3 cups

1  1/2  Finely chopped, mixed dried fruits such as apricots ,prunes, raisins and dates

Salt   – 1  1/2  tsp

Dried thyme   –  1  1/2 tsp

Black pepper  – 1/4 tsp

Method:

In a large saucepan, melt the butter over moderate heat.

Add the onion and celery, and sauté, stirring occasionally, until the onion is soft- about 5 minutes.

Stir in the rice, stock, water, dried fruit, salt, thyme and pepper and bring to a simmer.

Cover and reduce the heat to low.

Cook for 15 to 20 minutes or until the liquid is absorbed.

Cool to room temperature.

Will keep, covered and refrigerated, for up to 3 days.

Makes enough to fill a 12 to 14 pound turkey or two 6-pound chickens.
