Vegetable Khichdi Pulao




Ingredients:   (for 4)

Pulao rice  – 500 gm

Split green gram  –  115 gm

Turmeric  –  1/2 tsp

Onions   – 50 gm

Cucumber  – 55 gm

Lettuce  – 15 gm

Brinjals  –  115 gm

Ladies-fingers  – 55 gm

Potatoes  – 120 gm

Green chillies   – 6 gm

Ginger  – a small piece

Garlic  – a few flakes

Red chillies  – 1

Coriander leaves  – 1/2  bunch

Cinnamon –  2 gm

Cardamom  – 2 gm

Coconut  – 1/2

Saffron  –  a pinch

Lime  –  1

Fat  –  100 gm

Salt    –   to taste

Method:

Parboil rice.

Boil gram with turmeric.

Prepare vegetables.

Grind together ginger, garlic, red chillies, half the green chillies and coriander leaves. Slit remaining green chillies.

Crush cardamom and cinnamon. Slice onion.

Heat fat. Fry onion. When brown and crisp, remove.

Fry ground masala and green chillies. Add vegetables, crushed cinnamon, cardamom and salt. Cook covered on a slow fire without adding water till three-fourths cooked.

Extract coconut milk soak saffron in lime juice.

In a large pan put in rice, gram and vegetables in layers. Add more salt if necessary.

Sprinkle over with coconut milk and soaked saffron.

Finish off in the oven or as for pulao, till rice is cooked.
