Strawberry flavoured gelatine – 1 packet
A little lime juice
Well-drained canned fruit cocktail – 1 1/2 cups
Sponge cake – 1 (8 inch)
Cream – 1 cup
Sugar – 2 tbsp
Cherries and angelica for decoration
Add a dash of lime juice. Cool until syrupy.
Blend in the well-drained fruit cocktail. Chill.
Cut a circle about 4 inches across out of centre of cake.
Place cake on a plate and carefully fill with nearly set fruit jelly.
Chill in refrigerator overnight.
Whip cream until stiff and blend in the sugar.
Spread over top and sides of cake.
Decorate with angelica and cherries cut into wedges and serve.
