Malaysian Chicken Satay


Ingredients:

Chicken – 1

Sugar –  1 tsp

Garlic  – 2 cloves

Coriander  – 1/2 tsp

Shelled peanuts  – 1 tbsp

A pinch of aniseed

Oil  – 2 to 3 tbsp  or  thick coconut cream

Method:

Grind the garlic, coriander, aniseed and peanuts to a paste.

Add the sugar.

Clean and bone the chicken and cut the flesh into small pieces, about 1 1/2″ square.

Rub the pieces in the paste until each piece has acquired some of its flavour.

Thread on to skewers, brush with oil or thick coconut cream.

Grill over a hot charcoal fire, turning frequently to avoid burning.
