Tomato Juice – 1 lb-can
Gelatine – 3/4 oz
Hardboiled, sliced eggs – 2
Cooked peas – 1/2 cup
Cooked chicken meat – 1/2 lb
Canned or cooked sweet corn – 4 tbsp
Stick celery – 1
Tomato – 1
Mint – 1 tbsp (minced)
Dissolve the gelatine in 3 tbsps water over low heat. Add to the tomato juice and season.
Pour a little of the liquid into a ring mould and set a decoration of sliced egg and peas in it.
When set, pour in the rest of the tomato juice. Leave to set till firm. Cut chicken into small pieces, mix in the sweet corn, remaining egg and peas.
Add chopped celery, chopped tomato and mint and a little mayonnaise if it is too dry.
Unmould the jelly on to a dish, fill the centre with some of the meat salad and put the remainder around the outside of the ring.
You can bed the jelly on a layer of lettuce and garnish with sliced cucumbers and beetroots.
