Lemon Rice


Ingredients:

Rice  –    500 gm

Limes  –  2

Oil  –   2 tbsp

Turmeric powder  – 1 tsp

Fenugreek  –   1 tsp

Split black gram  –  1 level tbsp

Split bengal gram  –  1 level tbsp

Mustard seeds  –   1/4 tsp

Asafoetida  – a pinch

Cashewnuts  –  20 gm

Peanuts  –   30 gm

Curry leaves  –  a few sprigs

Red chillies  –  9  (whole)

Salt   – to taste

Method:

Boil the rice and set aside.

Roast and powder fenugreek, turmeric and black gram.

Mix with the rice. Add salt and lime juice.

Heat oil, fry nuts and remove. Add curry leaves, mustard seeds, asafoetida, bengal gram and red chillies.

When brown, remove from fire and add to rice. Mix well. Add nuts and serve hot. Four portions.
