Mango Sponge Flan


Ingredients:

Flour  – 1 cup

Sugar  – 1/2 cup

Vanilla essence  a few drops

Hot water  –  1 to 2 tbsp

Baking Powder  –  1/2 tsp

Tin of mangoes (or) Fresh mangoes  – 2

Cherries  – 4


Method:

Beat the eggs and sugar to a thick cream in a bowl over hot water. dd essence and sieved flour.

Fold in flour with a palette knife. Add 1 to 2 tbsp. of hot water.

Grease and flour flan tin and put the mixture into it.

Bake at 450 degrees F for about 10 to 12 minutes.

When cool, lift out the flan into a plate.

Spread colored  jam on the flan and decorate with mangoes and cherries.

Chicken Gravy (Chicken Dry Gravy) –  Viji’s Food Recipes

Ingredients:

Chicken  –  1/2 kg

Small Onion  –  10 nos

Garlic  – 8 flakes

Ginger  – 1  inch

Tomato  – 2 nos.

Cinnamon  –  1 inch

Cloves  –  1  to 2

Cardamom  –  1 no.

Curry leaves  – few

Chilli powder  – 2 tbsp

Coriander powder  – 2 tbsp

Big onion  – 1 no.

Salt  – to taste

Oil  –  4 to 6 tbsp

Method:

Wash the chicken. until the smell goes.

Marinate the chicken with chilli powder , coriander powder and  1 tsp of salt. Keep aside for half an hour.

Paste small onions, garlic , Tomato and ginger.

Heat oil in a pan, add cloves , cinnamon, cardamom. Add finely chopped length wise onion (1 no.) and curry leaves to the oil. Then add marinated chicken along with the ginger garlic paste and salt to taste.

To this mixture add 2 cups of water. Cook this chicken to the gravy stage until oil leaves from the gravy.

Garnish with coriander leaves.

Minted Peas


Ingredients:

Fresh Peas  –  1 kg  (shelled)

Mint Leaves  – 1 tbsp (chopped)

Lemon juice  – 1 tbsp

Green chillies  –  2 finely

Ginger  –  1/2″   (finely chopped)

Onion  –  1 (chopped)

Mono sodium glutamate   –  1/2 tsp

Ghee  – 1 tbsp

Salt  – to taste

Method:

Slowly melt the ghee. Rinse peas in cold water.

Add peas, mint, lemon juice, chillies ginger, onion and mono sodium glutamate.

Season with salt. Cook tightly covered, for about 15 minutes or till peas are just tender.
