Mango Sponge Flan


Flour  – 1 cup

Sugar  – 1/2 cup

Vanilla essence  a few drops

Hot water  –  1 to 2 tbsp

Baking Powder  –  1/2 tsp

Tin of mangoes (or) Fresh mangoes  – 2

Cherries  – 4


Beat the eggs and sugar to a thick cream in a bowl over hot water. dd essence and sieved flour.

Fold in flour with a palette knife. Add 1 to 2 tbsp. of hot water.

Grease and flour flan tin and put the mixture into it.

Bake at 450 degrees F for about 10 to 12 minutes.

When cool, lift out the flan into a plate.

Spread colored  jam on the flan and decorate with mangoes and cherries.

Curd Mousse


Curd  –  1 1/2  cups

sugar  –  4 – 5 tbsp

Gelatine  – 15 gm

Egg whites  – 2

A few drops of Vanilla essence

Cherries  –  15 gm

Angelica  – 15 gm


Beat the curd and sugar together.

Dissolve gelatine in 2 tbsp. Warm water.

Add dissolved gelatine and the essence to the curd mixture.

fold in stiffly beaten egg whites. Pour in wet moulds.

Turn out when set and decorate with angelica and cherries.

Apple Crunch


Apples  – 500 gm (stewed)

Brown sugar  – 2 tbsp

Juice of an orange  –  60 gm

Bread crumbs  –  30 gm

Coconut  – 60 gm (Grated)

Butter  or  Margarine


Place stewed apples in a ovenproof dish and sprinkle with brown sugar.

Pour orange juice over it.

Mix together the bread crumbs and coconut.

Spread over apples. Dot with butter or margarine.

Cover and cook at Mark 5  or 375′ F  for half an hour.

Uncover and cook for 20 minutes until golden brown.
