Chicken Gravy (Chicken Dry Gravy) –  Viji’s Food Recipes

Ingredients:

Chicken  –  1/2 kg

Small Onion  –  10 nos

Garlic  – 8 flakes

Ginger  – 1  inch

Tomato  – 2 nos.

Cinnamon  –  1 inch

Cloves  –  1  to 2

Cardamom  –  1 no.

Curry leaves  – few

Chilli powder  – 2 tbsp

Coriander powder  – 2 tbsp

Big onion  – 1 no.

Salt  – to taste

Oil  –  4 to 6 tbsp

Method:

Wash the chicken. until the smell goes.

Marinate the chicken with chilli powder , coriander powder and  1 tsp of salt. Keep aside for half an hour.

Paste small onions, garlic , Tomato and ginger.

Heat oil in a pan, add cloves , cinnamon, cardamom. Add finely chopped length wise onion (1 no.) and curry leaves to the oil. Then add marinated chicken along with the ginger garlic paste and salt to taste.

To this mixture add 2 cups of water. Cook this chicken to the gravy stage until oil leaves from the gravy.

Garnish with coriander leaves.

Chicken Khorma


Ingredients:    ( For 6 to 8 Person)

Chicken   –  1  (about 2 kg)

Coconut  – 1

Poppy seeds  – 100 gm

Cashew nuts  –  100 gm

Red chillies  –  1 to 2 gm

Green chillies  –    1

Coriander  –   10 gm

Onions  –  750 gm

Curds  –  500 gm

Fat  –  60 gm

Salt –  to taste

Method:

Clean and joint chicken. Grind together coconut, poppy seeds, cashew nuts, red chillies, green chilli, coriander and half the onions.

Heat fat and lightly saute remaining onions (sliced).

Add ground ingredients and fry for a few minutes.

Add jointed chicken. Fry for a further 5 minutes.  Add salt to taste and beaten curds.

Cook over low fire till done.

Chicken Biryani

Ingredients:

Chicken  –  1 (1 kg)

pulao rice –  400 gm

Tomatoes  –  250 gm

Onions –  250 gm

Garlic –  50 hm

Ginger – 50 gm

Green Chillies  –  50 gm

Coriander leaves – 1/2 bunch

Turmeric – 2 gm

Cinnamon and cardamom – 3 gm

Cloves – 1

Fat (preferably pure ghee) – 150 gm

Salt – to taste

Water – 800 ml

Lime – 1

Method:

clean and joint chicken.

Put into a pressure cooker with half the water, turmeric and salt. After pressure is built up cook for 3 minutes.

Cool and open (10 minutes).

Wash and drain rice.

Grind together ginger and garlic.

Slice onions and quarter tomatoes.

Heat fat. Add whole gram masala.

Add sliced onions and saute.

Add ginger and garlic and fry for ten minutes.

Add tomatoes, whole green chillies and chopped coriander leaves. Fry for another ten minutes.

Add salt. Add fried ingredients to chicken and add remaining water (hot).

Bring to boil. Add rice and lime juice.

Put lid on.

When steam starts coming out put weight on and cook for 10 to 12 minutes over slow fire.

Cool slightly (10 to 15 minutes). Open and serve immediately.
