How to Make Mutton Kofta Curry?

Ingredients:  (for 4)

Mutton – 500 gm

Cloves – 5

Eggs – 1

Cinnamon – a small piece

Split bengal gram – 55 gm

Ginger – 5 gm

Green chillies – 5 gm

Salt – to taste

Coriander leaves – 1/4 bunch

Ghee (absorption)  – 30 gm


Red chillies – 5 gm

Coriander powder – 15 gm

Turmeric – a pinch

Dry coconut – 30 gm

Garlic – a few flakes

Green chillies – a few

Tomatoes – 115 gm

Lime – 1/2

Salt – to taste

Onions – 55 gm

Fat (to fry) – 115 gm


Wash meat. Remove membranes and bones.

Mince meat.

Wash and boil gram.

Grind together cooked gram, cinnamon, cloves, ginger, green chillies and meat.

Add salt, chopped coriander leaves and beaten egg.

Form into even sized balls with wet hands and fry lightly.


Slice onion.

Grind the spices.

Blanch tomatoes.

Heat some fat and fry onion.

Add spices and fry.

Add blanched tomatoes, and stock to cook the spices.

Add koftas and salt; simmer till meat is cooked.

Add lime juice before taking off the fire.


How to Make Crab Curry?

Ingredients:  (for 4)

Crabs –  455 gm  (4)

Tomatoes –  115 gm

Coconut –   115 gm

Oil –  30 ml

Tamarind –  10 ml

Salt –  to taste

Kashmiri chillies –  10 gm

Coriander –  10 gm

Turmeric –  a pinch

Garlic –   a   few  flakes

Cumin –  a pinch

Ginger –  5 gm

Onions –  225 gm

Cinnamon –  a small piece

Spices for grinding


Wash crabs, pull the top shell from the body.

Discard the stomach bag attached to the shell below the eyes.

Discard greyish white  “dead man’s fingers” and wash well.

Cut each crab into 4 pieces.

Wash crab well.

Grind spices with coconut into a fine paste.

Heat oil and fry spices well.

Add crabs and fry.

Add chopped tomatoes and salt and cook on a slow fire.

When crab is cooked, add tamarind water ( soak tamarind in a little water and squeeze pulp ) and cook for 20 minutes.

How to Make Chicken Curry?


Chicken – 1 (about 1.35 kg)

Onions – 225 gm

Garlic – 6 flakes

Salt – to taste

Lime – 1

Fat – 30 gm

Coriander powder – 15 gm

Peppercorns – 6

Ginger – 10 gm

Red chillies – 5

Poppy seeds – 1 tsp

Cumin – 1/2 tsp

Grated coconut – 55 gm

Method :

Clean, wash and joint chicken.

Slice onions and garlic.

Heat fat. Add onions and fry. Add the chicken pieces and brown well.

Add sliced garlic and ground spices. Fry for 2 to 3 minutes.

Add water and salt and simmer till chicken is tender and gravy is thick.

Add lime juice just before serving.
