Goan Fish Curry

Ingredients:

Fish    (salmon, jew fish or hilsa)     –   300 gm

Kashmiri chillies  –  9  to  10

Turmeric  –  1/4 tsp

Coriander leaves  –  1 tsp

Coconut  –   1/2

Tamarind  –    a lemon-sized ball

Dry mango pieces   – 2  to 3

Salt  – to taste

Method:

Clean and slice fish. Apply salt and set aside for half an hour.

Grind together the Kashmiri chillies (seeds removed) , turmeric, coriander seeds and grated coconut.

When half done, add tamarind and grind to a fine paste.

Mix ground ingredients with sufficient water to cook fish and leave a gravy.

Add dry mango pieces. Bring to boil.

When it starts boiling, add fish and simmer till fish is cooked.

Prawn Rolls



Ingredients:

Shelled Shrimps or prawns- 1 tin

Or

Fresh Prawns  – 1 cup  cooked (chopped)

Thick white sauce – 1/2 to 3/4  cup

Tomato sauce – 3 to 4 tbsp

Salt and Pepper – to taste

Parsley  – 1 tbsp (chopped)

Flaky Pastry

Method:

Roll out the pastry and cut rectangles approximately  8 cm X 6 cm . ( 3 1/2″ X 2 1/2″ ).

Combine prawns, white and tomato sauces, salt, pepper and chopped parsley. It should be a thick spread.

Spread evenly over the pastry roll up and seal the flap of each with cold water.

Brush. the top of the roll with egg yolk and milk.

Place these on a baking sheet, seam end down.

Bake in moderate oven till golden.

How to Make Fish in Tomato Sauce?

Ingredients:    (for 4)

Fish   (Preferably Salmon)   –  500 gm

Coconut   –  1/2

Tomato Sauce –  115 gm

Fat  –  50 gm

Butter  –  30 gm

Green Chillies  –  2 to 3

Ginger  –  a small piece

Mustard  –  a pinch

Coriander leaves  –  1/4 bunch

Salt – to taste

Method:

Grind together green chillies, ginger, mustard, coriander leaves and salt.

Clean and cut fish, wash well.

Smear fish with ground ingredients.

Heat a little fat. Fry fish lightly. Remove.

Add more fat and remaining spice. Mix well.

Put fish in a pan, pour  over the fat and spices, thick coconut milk and tomato sauce.

Add butter and allow to cook  until tender.

Serve hot, garnished with peas or fried potatoes.
