Spanish Sauce



Ingredients:

Butter  –    2 tbsp

Lean bacon  – 60 gm

Carrot  –  60 gm

Mushrooms  –  30 gm

Tomato pulp  –  150 ml

Medium onion  –  1

Flour  –  1/2 cup

Second stock  – 1/2 cup

Bouquet garni ( Parsley, thyme, boy leaf, lime rind)

Sherry  –  75 ml  (optional)

Salt   – to taste

Method:

Cut bacon and vegetables into small pieces.

Fry lightly in butter.

Add flour and cook very slowly till golden brown.

Add stock, tomato pulp and bouquet garni.

Simmer for 30 minutes. Strain.

Re-heat and add sherry, if liked.

Vanilla Sauce

Ingredients:

Sugar  – 540 gm

Cornflour  – 85 gm

Salt –  1/2 tsp

Boiling water  – 1.8 litre

Vanilla  – 2 tbsp

Butter  – 2 tbsp  (30 gm)

Method:

Mix  the sugar, cornflour and salt.

Add boiling water and cook until clear.

Add vanilla and butter.

Serve hot.

Pasta Dough

For Ravioli and Noodles


Ingredients:

Eggs  – 2

Flour – 1 1/2 cup

Salt  – 3/4 tsp

Eggshell of warm water.

Method:

Place the sifted flour, mixed with salt on a pastry board.

Make a depression in the centre and add 2 unbeaten eggs.

Mix with the hands moistening with warm water, until the dough can be gathered into a ball.

It should be a hard dough. Knead to a smooth consistency.

Divide the dough in three parts for easy rolling.

Roll each paper-thin. For ravioli, cut in strips 8 cm. Wide.

To be used freshly made. For noodles, cut  1/2 cm  strips or as desired.

Lay out to dry well. Store until required.
