Banana Carrot Salad –  Viji’s  Food  Recipes




Ingredients:

Carrot  – 1 medium

Yellow Banana  –  1

Sugar  – 1 tsp

Lime Juice  – 1 tsp

Cream  – 1 tbsp

Method:

Grate the carrot.

Using a stainless steel knife, cut the bananas lengthwise and then in thin slices across.

Mix lime juice, cream and sugar, add grated carrot and banana. Mix well.

Minted Peas


Ingredients:

Fresh Peas  –  1 kg  (shelled)

Mint Leaves  – 1 tbsp (chopped)

Lemon juice  – 1 tbsp

Green chillies  –  2 finely

Ginger  –  1/2″   (finely chopped)

Onion  –  1 (chopped)

Mono sodium glutamate   –  1/2 tsp

Ghee  – 1 tbsp

Salt  – to taste

Method:

Slowly melt the ghee. Rinse peas in cold water.

Add peas, mint, lemon juice, chillies ginger, onion and mono sodium glutamate.

Season with salt. Cook tightly covered, for about 15 minutes or till peas are just tender.

Apple Crunch




Ingredients:

Apples  – 500 gm (stewed)

Brown sugar  – 2 tbsp

Juice of an orange  –  60 gm

Bread crumbs  –  30 gm

Coconut  – 60 gm (Grated)

Butter  or  Margarine

Method:

Place stewed apples in a ovenproof dish and sprinkle with brown sugar.

Pour orange juice over it.

Mix together the bread crumbs and coconut.

Spread over apples. Dot with butter or margarine.

Cover and cook at Mark 5  or 375′ F  for half an hour.

Uncover and cook for 20 minutes until golden brown.
