Spanish Sauce



Ingredients:

Butter  –    2 tbsp

Lean bacon  – 60 gm

Carrot  –  60 gm

Mushrooms  –  30 gm

Tomato pulp  –  150 ml

Medium onion  –  1

Flour  –  1/2 cup

Second stock  – 1/2 cup

Bouquet garni ( Parsley, thyme, boy leaf, lime rind)

Sherry  –  75 ml  (optional)

Salt   – to taste

Method:

Cut bacon and vegetables into small pieces.

Fry lightly in butter.

Add flour and cook very slowly till golden brown.

Add stock, tomato pulp and bouquet garni.

Simmer for 30 minutes. Strain.

Re-heat and add sherry, if liked.

Bordelaise Sauce

Ingredients:   (300 ml)

Espagnole sauce – 300 ml

Shallot or Small red onion  – 1  (chopped)

Parsley  – 1 tsp

Meat glaze – 1 tsp

Claret (optional)  – 75 ml

Salt – to taste

Method:

Cook shallot in claret or in a little stock.

Add espagnole and meat glaze.

Boil for 5 minutes. Strain through tammy cloth.

Add parsley, salt and reheat.

Bread Sauce      (300 ml)    (10 portions)

Bread Sauce

Ingredients:

Milk  –  300 ml

Onion  –  30 gm

Margarine  –  30 gm

Crumbs  –  45 gm

Cloves  – 2

Mace –  1 blade

Lemon rind  – 1 lemon

Salt –  to taste

Pepper  –  a pinch

Method:

Simmer onion stuck with clove and mace in milk for half an hour.

Put breadcrumbs, margarine and seasoning into a bowl.

Strain flavored milk over the breadcrumbs  mixture.

Stand in a warm place to thicken.

Reheat and beat well. One tbsp of cream may be added if desired.
