Minestrone Soup


White Kidney beans –  3 tbsp

Butter  – 3 tbsp

Salt – 1 tsp

Sugar – 1/2 tsp

Tomatoes   – 2  (peeled and chopped)

Pepper   – 1/4 tsp

Garlic  – 1 glove (chopped)

Grated Cheese  – 4 to 5 tbsp

Water  – 2 litres (approximately)

Bay leaves – 2

Elbow Macaroni – 2 tbsp

Celery – 2 stalks (chopped)

Wash the following vegetables and cut them as given:

1/2 small cabbage, shredded finely

1 small carrot, scrapped and diced

1/2 small onion, chopped

1 leek diced

1/2 medium turnip, peeled and chopped

1 tsp basil, chopped

1 potato, peeled and diced small piece squash or lauki peeled and diced.


Wash kidney beans and soak in water overnight.

Boil in sufficient water and cook till tender.

Melt butter. Saute onion, garlic, leek, parsley and basil till brown.

Add tomatoes, celery, potato, lauki, turnip, cabbage, carrot, salt, pepper, sugar and water.

Cook for 50 minutes to an hour.

Now add cooked beans and macaroni and cook till macaroni is tender adding more water if required.

Add half the grated cheese. Simmer for a minute.

Remove bay leaves. Serve in a bowls garnished with remaining grated cheese. A meal in itself.


How to Make Mixed Vegetable Soup? – Soup Recipes


Mixed Vegetable Soup


Stocks –  6 cups

Carrot  –  1

Potato  – 1

Shelled Peas  – 2 tbsps

Onion – 1/2

Butter  –  1/2 tbsp

Flour  –  1 tbsp

Milk  –  6 to 8 tbsps

Sugar, Salt and Pepper  –  to taste

Water  –  1/4 to 3/4 cup


Scrape carrot and dice.

Scrape and dice potato.

Chop onion finely.

Boil potato till almost tender.

Separately heat the quantity of water given, add sugar and salt.

Cook the peas and carrots uncovered in this.

Any remaining liquid can be mixed in the stock.

Melt butter. Add flour, stirring till it froths.

Gradually stir in stock to a smooth paste. Add cooked vegetables.

Simmer to desired consistency. Add salt and pepper. Remove from heat.

Scald milk and add to the soup. Check seasoning. Serve hot.

Enough for four to five people.

Tomatoes  – 115 gm

Onions  –   115 gm

Carrots – 115 gm

Turnip  – 30 gm

Leeks – 30 gm

Celery  – 10 gm

Parsley –  1 sprig

Macaroni  –  55 gm

Cheese – 30 gm

Garlic – 1 flake

Salt – to taste

Pepper – to taste

Stock – 1 litre

Oil – 15 ml


Wash and dice into small pieces all the vegetables. Blanch tomatoes.

Mince onions and garlic.

Chop parsley.

Heat fat. Fry minced onions, garlic, parsley, carrots and turnip.

Add leeks, salt, pepper, blanched tomatoes, cabbage and celery. Add stock.

Bring to boiling point. Add macaroni cut into 1.25 cm ( 1/2″) pieces.

Simmer on slow fire till vegetables and macaroni are cooked.

Serve hot garnished with grated cheese.
