Tomato Bhurta

Ingredients:

4 large, red tomatoes.

Wash and wipe.

Smear with oil all over. Toast on hot cinder or under an electric or gas grill.

Can also be toasted on a wire toaster placed over the flames of a gas cooker.

Cook till outer skin wrinkles and the tomatoes are tender.

Take off heat. Remove skin and mash.

Onion  –  1/2  (chopped)

Ginger  –  1.27 cm  (1/2″)  shredded

Green chilli  – 1

A few fresh coriander leaves(chopped)

Salt and black pepper  – to taste

Ghee or oil  – 1  to 2 tbsp

Method:

Heat ghee. Fry onion and ginger till golden brown.

Add mashed tomatoes, salt, pepper, chopped green chilli and coriander leaves.

Stir, cook for a minute till well blended. Serve with boiled rice.

Cabbage Salad


Ingredients:

Cabbage  (fresh)  –  225 gm

Onions  –  55 gm

Green chillies  – 5 gm

Coriander leaves  – 1/2 bunch

Salad oil  – 30 ml

Lime  – 1

Salt – to taste

Method:

Shred cabbage fine. Chop green chillies, onions and coriander leaves.

Mix all ingredients together.

Stuffed Capsicums

Ingredients:

Capsicums (large)   –  4 (450 gm)

Onions  – 35 gm

Worcester sauce  – 120 ml

Fat  – 30 gm

Salt – to taste

Roast and Powder:

Cinnamon,cloves, cardamom  –  5 gm

Method:

Slice tops of capsicums. Remove seeds and wash.

Apply salt inside and keep upside down on a rack.

Boil potatoes. Peel and dice. Chop onion.

Heat fat and fry onion, add diced potatoes and spices and salt and saute.

Fill capsicums with potato mixture.

Arrange on a baking tray.Four Worcester sauce over and bake in a slow oven till capsicums are tender.

Tomatoes  –  450 gm

Green chillies  –  3

Onions  –  55 gm

Garlic  –  3 flakes

Cumin  –  1/4 tsp

Fat  –  15 gm

Coriander leaves  –  a few

Salt  –   to taste

Method:

Wash and wipe the tomatoes.

Roast tomatoes and onions in hot ash (10 minutes) or bake in an oven.

Peel tomatoes, chop fine. Chop onions.

Heat fat. Add cumin, chopped onion, chopped garlic and green chillies.

Add tomatoes and salt  cook for a few minutes.

Serve hot, garnished with coriander leaves.

Onion Raita

Onion Raita Especially with Pulao and Biryani…

Ingredients:  (for 4)

Curds  –  225 gm

Onions  – 115 gm

Green chillies  – 5 gm

Coriander leaves  – 1/4 bunch

Cumin  (optional)  – a pinch

Salt – to taste

Method:

Peel and slice onions.

Chop green chillies and coriander leaves.

Roast and powder cumin if used.

Beat curds and mix all ingredients.

Vegetable Loaf




Ingredients:

Green peas  – 500 gm

French beans   – 500 gm

Carrots  – 4

Peanuts (minced)  – 2 tbsp

Onion – 1

Dried beans  – 250 gm (soaked and boiled)

Apricots  – 4

Eggs  – 2

Ghee  – 2 tbsp

Salt  –  to taste

Pepper and a few mint leaves

Tomatoes  – 2 large

Beetroot  – 1 large (boiled)

Tomato sauce

Method:

Cook the vegetables and also the dried beans.

Keep aside a few peas for garnishing.

Pass the vegetables through the mincer and season with pepper, salt and mint.

Fry the chopped onion in ghee, till brown.

Add vegetables and when cool, stir in beaten eggs and a little milk, it mixture seems too stiff.

Greese a loaf pan and fill in the mixture. Cover with grease paper and bake in a moderate oven for 45 minutes.

Unmould and garnish with peas, round slices of tomato, beetroot and sauce in the centre of the loaf.
