Chicken Masala

Ingredients:

Chicken (fryer)  –    1

Cumin –    1 tsp

Red Chillies (remove seeds)  –   10

Ginger  –     2.5 cm  (1″ piece)

Coriander  –  2 tsp

Turmeric –   1/2 tsp

Garlic  –    5 cloves

Vinegar  – 1 tbsp

Salt   – to taste

Method:

Grind the coriander, chillies, turmeric, garlic, ginger and cumin together with salt and vinegar.

Clean and joint the chicken.

Mix well with the ground ingredients. Allow to stand for 1 hour.

Fry in 2 tbsp fat; sprinkle water and cook covered till chicken is tender and there is no gravy. Serve hot.

Viji's food recipes

Ingredients:

Chicken  –  1/2 kg

Small Onion  –  10 nos

Garlic  – 8 flakes

Ginger  – 1  inch

Tomato  – 2 nos.

Cinnamon  –  1 inch

Cloves  –  1  to 2

Cardamom  –  1 no.

Curry leaves  – few

Chilli powder  – 2 tbsp

Coriander powder  – 2 tbsp

Big onion  – 1 no.

Salt  – to taste

Oil  –  4 to 6 tbsp

Method:

Wash the chicken. until the smell goes.

Marinate the chicken with chilli powder , coriander powder and  1 tsp of salt. Keep aside for half an hour.

Paste small onions, garlic , Tomato and ginger.

Heat oil in a pan, add cloves , cinnamon, cardamom. Add finely chopped length wise onion (1 no.) and curry leaves to the oil. Then add marinated chicken along with the ginger garlic paste and salt to taste.

To this mixture add 2 cups of water. Cook this chicken to the gravy stage until oil leaves from the gravy.

Garnish with coriander leaves.

Tomato Bhurta

Ingredients:

4 large, red tomatoes.

Wash and wipe.

Smear with oil all over. Toast on hot cinder or under an electric or gas grill.

Can also be toasted on a wire toaster placed over the flames of a gas cooker.

Cook till outer skin wrinkles and the tomatoes are tender.

Take off heat. Remove skin and mash.

Onion  –  1/2  (chopped)

Ginger  –  1.27 cm  (1/2″)  shredded

Green chilli  – 1

A few fresh coriander leaves(chopped)

Salt and black pepper  – to taste

Ghee or oil  – 1  to 2 tbsp

Method:

Heat ghee. Fry onion and ginger till golden brown.

Add mashed tomatoes, salt, pepper, chopped green chilli and coriander leaves.

Stir, cook for a minute till well blended. Serve with boiled rice.

Vegetable Hamburger


Ingredients:

Potatoes  – 225 gm

Carrots  –  225 gm

Onions  – 55 gm

Peas  –  115 gm

Capsicum  – 55 gm

A pinch of  Cayenne pepper

Bread  – 30 gm

Egg  – 1

Salt  –  to taste

Oil  – 10 gm

Method:

Boil and mashed potatoes, carrots and peas, chop onions and capsicums finely.

Soak bread. Heat oil. Saute onions and capsicums.

Add mashed vegetables and bread with moisture squeezed out.

Add cayenne pepper, salt and beaten egg.

Mix well. Shape into hamburger 2″ in diameter. Shallow fry.

Ingredients:

Apples  – 500 gm (stewed)

Brown sugar  – 2 tbsp

Juice of an orange  –  60 gm

Bread crumbs  –  30 gm

Coconut  – 60 gm (Grated)

Butter  or  Margarine

Method:

Place stewed apples in a ovenproof dish and sprinkle with brown sugar.

Pour orange juice over it.

Mix together the bread crumbs and coconut.

Spread over apples. Dot with butter or margarine.

Cover and cook at Mark 5  or 375′ F  for half an hour.

Uncover and cook for 20 minutes until golden brown.

Ginger Cream



Ingredients:

300 M.lit. Cream

150  M.lit.  Milk

2  1/2  Table spoons sugar

Ginger juice  –  1 tbsp

Gelatine  –  1/2 Envelope

1 tbsp Candied  Ginger  (chopped)

Egg yolks  – 3

Method:

Beat the yolks of eggs.

Add to milk and cook on a double boiler till thick.

Add sugar and cool. Dissolve gelatine in a little water and mix with ginger juice and chopped ginger.

Add this to the milk mixture. Add this to the milk mixture, whip cream slightly and mix with custard, pour into prepared , mould, cool over ice for a while. Refrigerate and serve cold.

Mango Souffle


Ingredients:

Ripe Mangoes  –   2 (diced)

Egg yolks  – 4

Sugar  –  1  1/4 cups

Hot thick milk  –  1  lit

Gelatine  –  2 packets

Whipped cream   –  1 cup  (optional)

Egg  whites  –   4  ( whipped very stiff )


Method:

Beat together egg yolks and sugar till thick and creamy.

Gradually stir in the milk. Strain into a saucepan and cook over gentle heat, stirring continuously till the custard thickens and coats the back of the spoon.

Then cool it, stirring all the while.  Add the gelatine, dissolved in 1/2 cup of warm water.

Fold in the whipped cream and egg whites.

Now stir in the mangoes. Pour into a glass bowl and keep in the refrigerator to set.

When set, decorate with whipped cream and mango slices.

Ingredients:    ( For 6 to 8 Person)

Chicken   –  1  (about 2 kg)

Coconut  – 1

Poppy seeds  – 100 gm

Cashew nuts  –  100 gm

Red chillies  –  1 to 2 gm

Green chillies  –    1

Coriander  –   10 gm

Onions  –  750 gm

Curds  –  500 gm

Fat  –  60 gm

Salt –  to taste

Method:

Clean and joint chicken. Grind together coconut, poppy seeds, cashew nuts, red chillies, green chilli, coriander and half the onions.

Heat fat and lightly saute remaining onions (sliced).

Add ground ingredients and fry for a few minutes.

Add jointed chicken. Fry for a further 5 minutes.  Add salt to taste and beaten curds.

Cook over low fire till done.

Chicken Pineapple



Ingredients:

Chicken    – 1

Pineapple cubes  – 1 cup

Wine  – 1 tbsp

Soya sauce  – 3 tbsp

Sugar  – 1 tbsp

Salt – to taste

Cornflour  – 1 tbsp

Ginger  – 1″ piece

Chicken stock  – 1/2 cup

Pineapple juice  – 1/2 cup

Sticks Celery  – 2 to 3

Gingely oil for frying.

Method:

Deep fry the whole chicken until golden brown.

Place in a bowl, add sliced ginger, sugar, wine, soya sauce and salt.

Steam until tender. Remove the bones and cut chicken into small pieces.

Place on a dish and keep warm. Mix pineapple juice with chicken stock.

Blend in cornflour. Boil stirring until the mixture thickens.

Add pineapple cubes and celery and pour over chicken.

Garnish with parsley.

Fish Cutlets (Indian Style)


Ingredients:

Fish   –     500 gm

Bread  –  2 slices

Lime  –   1/2

Green chillies  – 5 gm

Onions  – 200 gm

Egg  – 1

Salt –  to taste

Breadcrumbs  – 30 gm

Oil for frying  ( absorption)   – 40 ml

Cucumber   –  30 gm

Tomatoes   –  50 gm

Coriander leaves  – a few

Method:

Clean, wash and boil fish. Flake fish.

Chop onions and chillies fine.

Soak bread in water.

Squeeze out water from bread.

Mix all ingredients. Add salt.

Shape into cutlets.

Coat with egg and breadcrumbs and deep fry.

Garnish with chopped coriander leaves, sliced cucumber and tomatoes.
