Minted Peas


Ingredients:

Fresh Peas  –  1 kg  (shelled)

Mint Leaves  – 1 tbsp (chopped)

Lemon juice  – 1 tbsp

Green chillies  –  2 finely

Ginger  –  1/2″   (finely chopped)

Onion  –  1 (chopped)

Mono sodium glutamate   –  1/2 tsp

Ghee  – 1 tbsp

Salt  – to taste

Method:

Slowly melt the ghee. Rinse peas in cold water.

Add peas, mint, lemon juice, chillies ginger, onion and mono sodium glutamate.

Season with salt. Cook tightly covered, for about 15 minutes or till peas are just tender.

Mince Stuffed Baked Tomato


Ingredients:

Tomatoes  – 4 large  (Ripe firm tomatoes)

Cut the stem end and scoop out pulp. Sprinkle a little salt and invert tomatoes to drain.

Minced meat  – 200 gm

Reserved tomato pulp

Onion  – 1/2  (chopped)

Garlic – 2 cloves  (minced)

Parsley  – 1 tbsp  (chopped)

Salt and Pepper  – to taste

Paprika  or a pinch of red chilli powder

Soft Breadcrumbs  –   1  1/2 cups

Grated cheese –  3 tbsp

Water  – 1 cup

Oil  – 2 tbsp

Method:

Heat oil. Fry onion and garlic till golden.

Add minced meat, tomato pulp, salt, pepper and paprika and fry further till mince is brown.

Add water. Cover and cook till mince is tender and dry.

Add chopped parsley and mix in soft breadcrumbs.

Stuff the tomatoes with the mixture. Top with cheese. Bake for about 20 minutes. Serve hot.

Fried Chauli Beans



Ingredients:

Chauli beans  – 225 gm

Salt – to taste

Fat or oil  – 30 gm

Red chillies  – 5 gm

Onions  – 10 gm

Method:

String and cut beans into small pieces.

Crush chillies. Add chillies to beans, add salt and just enough water to cook.

Cook on slow fire with lid partially off.

When water was evaporated and beans are cooked, remove.

Heat fat. Fry sliced onions. Add beans and saute.

Spinach Puris

Ingredients:

whole wheat flour  – 500 gm

Spinach Puree  – 120 ml

Water  – 60 ml

Fat (for the dough)  – 30 gm

Fat for frying   – 1 kg

Salt – to taste

Method:

Sieve flour and add spinach puree, water, fat and salt to prepare a medium stiff dough. Knead well.

Set aside for at least half an hour.

Divide the dough into even sized balls.

Roll out puris evenly with a 10 c.m diameter approximately.

Fry puris in enough oil, gently pressing down with a flat spoon in circular motion.

When puffed up turn over. Lightly brown on both sides.

Drain on absorbent paper and serve hot.

Stuffed Capsicums

Ingredients:

Capsicums (large)   –  4 (450 gm)

Onions  – 35 gm

Worcester sauce  – 120 ml

Fat  – 30 gm

Salt – to taste

Roast and Powder:

Cinnamon,cloves, cardamom  –  5 gm

Method:

Slice tops of capsicums. Remove seeds and wash.

Apply salt inside and keep upside down on a rack.

Boil potatoes. Peel and dice. Chop onion.

Heat fat and fry onion, add diced potatoes and spices and salt and saute.

Fill capsicums with potato mixture.

Arrange on a baking tray.Four Worcester sauce over and bake in a slow oven till capsicums are tender.

Carrot Rolls

Ingredients:

Carrot   – 1 kg

Khoya  – 1/2 kg

Paneer  – 1/4 kg

Cardamoms  – 60 gm

Almonds  – 120 gm

Sugar candy  – 60 gm

Method:

Scrape and wash the carrots. Then scoop a hollow in each.

Put the carrots to boil till they are nearly tender.

Prepare a syrup of one thread consistency and boil the carrots in it for 5 to 10 minutes.

Take out the carrots and fill each carrot with almonds, cardamoms, coconut and sugar candy.

Mash and mix khoya and paneer together and cover the carrots with a thin mixture.

Cover the opening of the carrot with some dough.

Heat the ghee in a kharahi and fry each carrot separately.

Vegetable Pie With Cheese Sauce


Ingredients:

Potatoes  – 450 gm

Peas  – 225 gm

Carrots  – 225 gm

Tomatoes  – 115 gm

Celery  – 115 gm

Sauce:

Mlik  – 295 ml

Flour  – 15 gm

Method:

Prepare a white stew with half the potatoes and the remaining vegetables.

Make a cheese sauce with flour , butter, milk and cheese.

Boil and mash the remaining potatoes.

Mix cheese sauce with vegetables put into a pie dish.

Cover with creamed potatoes fork it as for shepherd’s pie.

Tomato Bhurta

Tomatoes  –  450 gm

Green chillies  –  3

Onions  –  55 gm

Garlic  –  3 flakes

Method:

Vegetable Loaf




Ingredients:

Green peas  – 500 gm

French beans   – 500 gm

Carrots  – 4

Peanuts (minced)  – 2 tbsp

Onion – 1

Dried beans  – 250 gm (soaked and boiled)

Apricots  – 4

Eggs  – 2

Ghee  – 2 tbsp

Salt  –  to taste

Pepper and a few mint leaves

Tomatoes  – 2 large

Beetroot  – 1 large (boiled)

Tomato sauce

Method:

Cook the vegetables and also the dried beans.

Keep aside a few peas for garnishing.

Pass the vegetables through the mincer and season with pepper, salt and mint.

Fry the chopped onion in ghee, till brown.

Add vegetables and when cool, stir in beaten eggs and a little milk, it mixture seems too stiff.

Greese a loaf pan and fill in the mixture. Cover with grease paper and bake in a moderate oven for 45 minutes.

Unmould and garnish with peas, round slices of tomato, beetroot and sauce in the centre of the loaf.
