Ingredients:

Fish –   450 gms    (Pomfret , ghol)

Parsley  – 1 to sprig

Potatoes  – 350 gm

Salt and Pepper  – to taste

Egg  –  1

Breadcrumbs   – 45 gms

Fat   for   fry   – 50 gm

Method:

Clean and cut boil fish in court bouillon.

Flake and skin fish and remove bones.

Boil and mash potatoes.

Mix fish, potatoes and seasoning.

Divide into equal portions, shape and coat with egg and toss in breadcrumbs.

Reshape and fry in hot fat.

Drain and serve hot garnished with parsley.

Fish Pickle


Ingredients:

Pomfret or Salmon  – 1 kg

1 saucerful grated jaggery

Oil  – 1 bottle

Salt  – to taste

Turmeric powder  –  1 tsp

Red chilli powder  – 1 tsp

Grind Paste:

Cumin  –  4  1/2 tsp

Garlic  – 3 pods

Red Goa or Kashmir chillies  – 20

Vinegar  – 1  1/2 cups

Method:

Clean, wash and cut the fish into 5 cm. (2″) pieces.

Mix turmeric and red chilli powders and salt to taste.

Apply to the fish. Set aside for 10 minutes, then fry in one cup gingelly (til) oil.

Bring the remaining oil to a boil in another pan.

Add the ground masala and brown it on a slow fire until the oil comes to the top.

Add jaggery and fried fish; simmer until the oil floats to the top. Cool, then bottle.

Eggs  –    1

Bread  –  2 slices

Lime  –   1/2

Green chillies  – 5 gm

Onions  – 200 gm

Egg  – 1

Salt –  to taste

Breadcrumbs  – 30 gm

Oil for frying  ( absorption)   – 40 ml

Cucumber   –  30 gm

Tomatoes   –  50 gm

Method:

Clean, wash and boil fish. Flake fish.

Chop onions and chillies fine.

Soak bread in water.

Squeeze out water from bread.

Mix all ingredients. Add salt.

Curds  – 220 gm

sugar  – 3/4 tsp

Cardamom powder  – 1 tsp

Lime juice  – 2

Fish Roe Achar


Ingredients:

1 Large fish roe

Chilli powder  – 1 tbsp

Mustard powder  – 1 tbsp

Turmeric powder  – 2 tsp

Vinegar  -1 cup

Salt    –    1  1/2 tsp

Grind to a fine paste:

Cumin  – 2 tsp

1 pod garlic

Method:

Mix all the masalas in half a cup vinegar.

Clean fish roe. Wash with salt and flour.

Apply salt and keep aside for an hour, then wash again.

Apply salt, turmeric and chilli powders and fry the whole fish roe in oil.

Cool thoroughly. Cut it into pieces.

Fish Savory Balls


Ingredients:

Fish kheema  – 125 gm

Onion  – 100 gm

Lime  – 1/2

Green chillies  – 3 to 4

Gram flour  (besan)  – 125 gm

Soda bicorb  – 1/2 tsp

Water  – 50 ml

Oil to fry

Method:

Chop green chillies, onion, ginger and tomato.

Fish Cutlets


Ingredients:

Fish Kheema  – 125 gm

Potatoes  – 125 gm

Onion  -50 gm

Green chillies  – 2 to 3

Ginger  – 1/2″ piece

Coriander leaves  – a few sprigs

Lime  – 1/4

Garam masala – 1/4 tsp

Egg  – 1/2

Breadcrumbs  – 50 gm

Salt and Pepper  – to taste

Method:

Wash, peel and boil potatoes. Drain.

Dry the moisture by putting the potatoes in a pan, back on heat. Mash.

Chop onion, green chillies, ginger and coriander leaves. Heat 1 tbsp oil.

Saute chopped ingredients. Add thawed fish kheema with the liquid that is extracted as it thaws.

Saute for 5 to 10 minutes to allow all the moisture to evaporate.

Remove from the fire.

Add mashed potato, salt, pepper, garam masala and lime juice.

Shape into cutlets. Dip in beaten egg. Roll in breadcrumbs.

Reshape and deep fry till golden brown.

Drain on paper and serve hot, with tomato sauce.

Ingredients:    (for 4)

Fish   (Preferably Salmon)   –  500 gm

Coconut   –  1/2

Tomato Sauce –  115 gm

Fat  –  50 gm

Butter  –  30 gm

Green Chillies  –  2 to 3

Ginger  –  a small piece

Mustard  –  a pinch

Coriander leaves  –  1/4 bunch

Salt – to taste

Method:

Grind together green chillies, ginger, mustard, coriander leaves and salt.

Clean and cut fish, wash well.

Smear fish with ground ingredients.

Heat a little fat. Fry fish lightly. Remove.

Add more fat and remaining spice. Mix well.

Put fish in a pan, pour  over the fat and spices, thick coconut milk and tomato sauce.

Add butter and allow to cook  until tender.

Serve hot, garnished with peas or fried potatoes.

Fish   (fresh-water)   –  500 gm

Onions  – 100 gm

Ginger  –  5 gm

Cumin   –  1 tsp

Garlic   –   3  to 4 flakes

Turmeric –  1/2   tsp

Chilli powder – 1 tsp

Salt – to taste

Dry mango powder  – 1 tsp

Garam masala  – 1/2 tsp

Fat to fry (absorption)  – 30 gm

Method:

Scale and clean fish skin and remove bones. Wash well.

Cut into finger lengths.

Grind spices (onions to garam masala) and smear over the fish.

Set aside for about 3 hours.

Deep fry lightly. Remove and drain.

When about to serve, deep fry again.

Serve on toothpicks with mint chutney or tomato sauce.
