Chicken Masala

Ingredients:

Chicken (fryer)  –    1

Cumin –    1 tsp

Red Chillies (remove seeds)  –   10

Ginger  –     2.5 cm  (1″ piece)

Coriander  –  2 tsp

Turmeric –   1/2 tsp

Garlic  –    5 cloves

Vinegar  – 1 tbsp

Salt   – to taste

Method:

Grind the coriander, chillies, turmeric, garlic, ginger and cumin together with salt and vinegar.

Clean and joint the chicken.

Mix well with the ground ingredients. Allow to stand for 1 hour.

Fry in 2 tbsp fat; sprinkle water and cook covered till chicken is tender and there is no gravy. Serve hot.

Ceylon Egg Curry


Ingredients:

Eggs  –  4

Small onions  –  55 gm

Green chillies   –  1

Turmeric powder   –  1/4 tsp

Ginger  – 5 gm

Garlic  – 1 clove

Curry leaves  – 2 sprigs

Fenugreek   – 1/4 tsp

Cinnamon  – a small piece

Lime  –  1/2

Coconut  – 1/2

Salt  – to taste

Method:

Hard-boil the eggs, crack, cool in water. Shell and cut into halves.

Grate coconut. Grind and make a thick and a thin extraction.

Slit green chillies. Slice onions. chop ginger.

In a pan put together all the ingredients except eggs, thick coconut milk and lime juice.

Boil until all ingredients are cooked.

Add thick coconut milk and lime juice and stir well.

Add eggs.  Simmer for a few minutes longer, stirring all the time.

N.B :  The gravy by itself is known as coconut soup or kirihothi.

Malai Prawn Curry

Ingredients:

Prawns  – 500 gm

Onion  – 115 gm

Ginger – a small piece

Turmeric  – 1/4 tsp

Cardamon – 1 tsp

Cloves (roast and powder)

Sugar  – 1 tsp

Half of coconut

Black treacle  – 1 tbsp  (optional)

Salt – a pinch

Oil  – 55 gm

Method:

Shell and devein the prawns.

Season and fry the prawns and set aside.

Grind together half the onion and ginger to a fine paste.

Grate the coconut and extract the coconut milk.

Heat the oil and fry the remaining onion (sliced).

Add the ground ingredients and fry.

Add the powdered masala and coconut milk, sugar, treacle and prawns.

Cook till the prawns are done.

How to Make Mutton Curry? – Mutton Curry Recipes


Mutton Curry

Ingredients: (for 4)

Mutton  –  500 gm

Coriander powder – 10 gm

Pepper seeds – 5 gm

Turmeric  –  1/4 tsp

Ginger  – 2.5 cm (1″ piece)

Cashew nuts  – 15 gm

Garlic – 3 flakes

Coconut – 30 gm

Garam masala  – 1 pinch

Vinegar  – 1 tsp

Onions  – 1

Oil  –  25 ml

Salt  – to taste

Method:

Clean and cut mutton into pieces.

Grind together the spices, cashewnuts and coconut.

Slice onion. Heat oil. Fry onion till crisp brown.

Add spices and fry for 2 to 3 minutes longer.

Add mutton. Fry for a further 5 minutes. Add salt.

Cover pan. Cook over a very slow fire. Keep a little water over the lid of pan to stop meat from burning.

Add hot water as desired, a little at a time till meat is tender.

Add vinegar, Check for seasoning. Remove.

How to Make Goan Chicken Curry?


Ingredients:

Chicken  –  1

Coconut –  1

Turmeric  –  2.5 cm  (1″ piece)

Red chillies  –  8 to 10

Peppercorns  –  6

Cinnamon  – 5 cm  (2″ piece)

Cardamoms  – 4

Ginger  –  2.5 cm   (1″ piece)

Cumin –  1 tsp

Garlic – 1 small pod

Cloves –  4

Tamarind –  the size of  a lime

Vinegar  –  2 tsp

Oil  – 2 tbsp

Onions  – 2

Salt – to taste

Sugar ( Optional)  –  1 tsp

Method:

Clean and joint the chicken. Apply salt.

Grind turmeric, red chillies, ginger, peppercorns, cinnamon and cardamoms to a fine paste.

Slice onions.

Heat oil, fry onions till golden brown. Add chicken pieces and fry well. Add a little water and let it cook, covered, till meat is tender.

Grate the coconut. Grind and extract milk, When chicken is cooked add spices, coconut milk, tamarind juice, vinegar, salt and sugar and simmer for a few minutes longer.

How to make Masala Roast Chicken?


Ingredients:

Chicken  (medium-sized)  –  1

Butter – 30 gm  (2 tbsp)

Good Stock – 1 cup

Grind to a fine paste:

Red chillies ( without seeds ) – 5

Cloves – 6

Cinnamon  –  1/2″

Peppercorns  –  a few

Garlic –  6 cloves

Salt – to taste

Method:

Clean chicken.

Apply ground spices inside and out.Masala Roast Chicken

Put back  giblets into the chicken.

Smear the breast with butter.

Place in a roasting tin.

Pour stock around.

Roast the chicken in a fairly hot oven, Gas mark 6 or 400’F for about 1 hour 15 minutes, or till done.

Dish out.

Surround with straw potatoes.

Serve gravy in a sauce-boat.

Serve vegetable pulao, mint raita, pickle and pappad separately

Grated coconut – 55 gm

Method :

Clean, wash and joint chicken.

Slice onions and garlic.

Heat fat. Add onions and fry. Add the chicken pieces and brown well.

Add sliced garlic and ground spices. Fry for 2 to 3 minutes.

Add water and salt and simmer till chicken is tender and gravy is thick.

Add lime juice just before serving.
