Herbed Butter And Tomato Sandwiches

Ingredients:

Sandwich bread  –  8 slices

Butter   –  30 gm

Freshly chopped parsley   – 1 tbsp

Prepared French mustard  – 1/2 tsp

Salt and Pepper   –  to taste

Red firm Tomatoes  – 2  to 3

Method:

Bread for sandwiches should be a day as it cuts finer.

Cut the tomato into rings.

Soften the butter and mix in salt, pepper, parsley and prepared mustard.

Spread the paste on the bread.

Place tomato rings in between the buttered slices.

Trim the crusts and cut the sandwiches into strips or triangles.

Stuffed Eggs

Ingredients:

Hard boiled eggs  – 7

Butter  – 2 tbsp

Chopped Onion  –  1 tsp

Fresh mushrooms  –  6 tbsp

Salt , Pepper and Paprika  –  to taste

Dry mustard  –   1/4  tsp

Parsley (chopped)  – 1 tbsp

Method:

Shell eggs. Cut lengthwise and take out yolks.

Freshly chop mushrooms just before cooking.

Melt butter, saute onion and mushrooms  gently till dry.

Mash egg yolks. Mix with onion mushroom mixture and season with salt, pepper, paprika and dry mustard.

Finally mix in freshly chopped parsley.

Stuff the egg whites with mixture and serve  as snacks.

Ingredients:

Eggs   – 4

Leeks  –  15 gm

Carrots  – 15 gm

Flaked crap or prawns  – 15 gm

Cabbage  – 15 gm

Onion  – 15 gm

Capscium  – 30 gm

Salt – to taste

Oil  – to shallow fry

Method:

Wash and shred vegetables.

Cut up the capsicum finely.

Beat up eggs slightly.

Ceylon Egg Curry


Ingredients:

Eggs  –  4

Small onions  –  55 gm

Green chillies   –  1

Turmeric powder   –  1/4 tsp

Ginger  – 5 gm

Garlic  – 1 clove

Curry leaves  – 2 sprigs

Fenugreek   – 1/4 tsp

Cinnamon  – a small piece

Lime  –  1/2

Coconut  – 1/2

Salt  – to taste

Method:

Hard-boil the eggs, crack, cool in water. Shell and cut into halves.

Grate coconut. Grind and make a thick and a thin extraction.

Slit green chillies. Slice onions. chop ginger.

In a pan put together all the ingredients except eggs, thick coconut milk and lime juice.

Boil until all ingredients are cooked.

Add thick coconut milk and lime juice and stir well.

Add eggs.  Simmer for a few minutes longer, stirring all the time.

N.B :  The gravy by itself is known as coconut soup or kirihothi.

Egg and Potato Curry

Ingredients:   (for 4)

Eggs  – 4

Potatoes  – 225 gm

Onions  – 120 gm

Red chillies  – 6 gm

Coriander  – 10 gm

Turmeric  – 1 gm

Ginger   – 3 gm

Coconut  – 1/2

Cinnamon cloves  – 1/2 gm

Green chillies  – 3

Curry leaves  – 2 sprig

Salt – to taste

Oil  – 30 ml

Vinegar  – 10 ml

Method:

Hard-boil eggs. Crack and cool in water. Shell and keep aside.

Peel potatoes. Quarter and immerse in cold water.

Slice onions, chop ginger, grate coconut.

Roast red chillies, coriander and turmeric and grind to a fine paste.

Grind coconut also to a smooth paste.

Heat half of the oil. Sauté sliced onion leaving aside a few slices for tempering.

Add ginger, whole green chillies and ground spices. When well fried, add ground coconut and fry for 2 minutes.

Add potatoes, water and salt and cook till potatoes are tender.

Add eggs, cut into halves and vinegar. Remove from fire.

Heat remaining oil in a fry pan. Brown onions, crushed cloves and cinnamon.

Add curry leaves and pour over curry.

Margarine  – 60 gm

Ingredients:   ( For 4 )

Eggs  –  4

Potatoes  – 450 gm

Salt –  to taste

Fat  –  50 gm

Method:

Peel and cut potatoes into thin roundels.

Heat fat. Sauté potatoes. Add Salt.

Cover and cook over gentle heat till potatoes are cooked.

When cooked, spread onto a shallow pan.

Make dents. Break eggs one at a time into a wet cup.

Pour one into each dent.

Cook covered over gentle heat till eggs set.

Serve hot with tomato sauce.

Ingredients:

Eggs –  1 or 2 per portion

Bacon –  3 rashers per portion ( about 60 gm)

Method:

Fry eggs as in the above recipe.

Remove the rind off the bacon.

Fry in a little fat or grill on a flat tray.

Dress neatly around the eggs.

Salt – to taste

Pepper – a pinch

Fat – 10 gm

Method:

Beat egg just to mix.

Add liquid and seasoning.

Melt fat in an omelette pan.

Pour in egg mixture.

Cook slowly keeping heat low.

As under-surface becomes set, start lifting it slightly with a spatula to let uncooked portion flow underneath and cook.

When whole mixture is creamy, brown the bottom lightly.

Fold and remove on to a plate. Serve immediately.

Margarine – 20 gm

Milk – 30 – 50 ml

Salt and Pepper – to taste

Method:

  1. Prepare, cook and mash the potatoes.
  2. Melt the margarine and beat half of it and the milk into the potatoes.
  3. Place the potatoes in 7.5 cm deep baking tins. Smooth over the top.
  4. Use egg shell to make nests break an egg into each.
  5. Sprinkle the rest of the margarine over the top and place in a hot oven until the eggs are cooked and the potato is brown. Serve hot.
